Under the direction of Hiromitsu Nozaki, head chef of two Michelin star restaurant Waketokuyama, Fairmont Pacific Rim’s Chef Takayuki (Taka) Omi has been finessed in the art of Waketokuyma’s Gozen, essentially ‘Chef’s Plate.’ The result is an offering of four individual plates, served as a single presentation. In this instance, specially chosen white plates present a total of 32 components offering a variety of seafood and meats, along with mixed vegetables including kumquat, lotus root, snow peas. For Chef Taka, it is a passion project, taking eight hours to prepare 15 plates with each platter vividly expressing Chef Nozaki and Chef Taka’s culinary artistry. Also served is a custom created Houjicha (Roasted Green Tea) by Sakurai Japanese Tea Experience.
From January 27 through February 28, Fairmont Pacific Rim will offer 15 Gozen lunch plates per day available Monday to Friday Only, by reservation. $62 + taxes per person.
